Dr. Mary Katherine "Kathy" (Beavers) Chauncey, Ph.D., RDN Dr. Mary Katherine "Kathy" (Beavers) Chauncey, Ph.D., RDN, 79, of Lubbock, Texas, passed away peacefully at her home on Thursday, July 30, 2026. Kathy was born on January 10, 1947, in Russellville, Arkansas, to Bacel and Mamie Beavers. She was preceded in death by her beloved husband of 43 years, Jim Chauncey; her parents; her brothers, Jim and Robert Beavers; and her sisters, Betty Kendrick, Carolyn, and Marilyn Beavers. Above all else, Kathy loved the Lord. She was a devoted Christian, faithful prayer warrior, and longtime member of Southcrest Baptist Church, where she had worshiped since 1996 and was an active member of the Posey/Clark LIFE Group. Her faith was the foundation of her life and influenced every decision she made. In 1992, Kathy joined the Texas Tech University Health Sciences Center as an Assistant Professor in the Department of Family and Community Medicine, where she became a respected educator, registered dietitian, and expert in nutrition and obesity. She was a Fellow of the Academy of Nutrition and Dietetics and later earned the distinction of Professor Emeritus following her retirement. She was also a twice-published author, sharing her knowledge and passion for nutrition with readers beyond the classroom. Throughout her career, she taught and mentored countless medical students, many of whom continue to serve the Lubbock community as physicians at University Medical Center. Her legacy lives on through the many healthcare professionals whose lives she influenced. Kathy was equally passionate about serving her community through civic engagement. She was a founding member of Citizens for Education Reform and an active member of the Constitutionalist Society, Lubbock Area Republican Women's Association (LARW), and the Conservative Action Network. She regularly traveled to Austin to advocate for educational reform, support legislation she believed in, and testify before the Texas State Board of Education. She believed that faith should inspire action and never hesitated to stand for her convictions. She also loved to travel and treasured opportunities to experience history and God's creation. One of the greatest joys of her later years was traveling with friends from Southcrest Baptist Church to Turkey, Greece, and Israel, where she visited many of the places recorded in Scripture and walked where Jesus walked. It was a journey that deepened an already steadfast faith. While Kathy accomplished much throughout her life, her favorite title was simply "Grammy." She adored her grandson, Jack, and delighted in spoiling him with thoughtful gifts that reflected what mattered most to her. Whether it was the Adventure Bible she gave him or the cross he proudly wears around his neck, Kathy wanted Jack to always know the love of Christ and to carry his faith with him throughout his life. Nothing brought her greater joy than watching him grow. Kathy is survived by her son, Matt Chauncey, and his wife, Kami, of Austin, Texas; her beloved grandson, Jack Chauncey; along with many nieces, nephews, extended family members, and dear friends whose lives were touched by her friendship, encouragement, and unwavering faith. A visitation will be held on Sunday, August 9, from 2:00 to 3:30 p.m. at Sanders Funeral Home. Funeral services will be held on Monday, August 10, at 1:00 p.m. at Sanders Funeral Home with Dr. David Wilson officiating. Interment will follow at 2:00 p.m. at Lubbock Cemetery. In lieu of flowers, the family requests that memorial donations be made to Citizens for Education Reform, the Constitutionalist Society, the Lubbock Area Republican Women's Association (LARW), or the Conservative Action Network in Kathy's memory. Kathy's life was marked by unwavering faith, devoted service, steadfast conviction, and unconditional love for her family. She invested her life in teaching, encouraging, praying for, and serving others. Although she will be deeply missed, her family rejoices in the promise that she is now in the presence of her Savior, hearing the words she longed for all her life: "Well done, good and faithful servant." (Matthew 25:23)
